Turquoise Cafe’s Black Doris and dark chocolate muffins

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Makes 6 large muffins or 8 small muffins

50g butter

2 eggs

1 Tbsp vanilla

2½ cups flour

1 cup sugar

3 tsp baking powder

pinch salt

1 cup milk

1 can Black Doris plums, drained (other fruit can be used)

dark chocolate buttons

Method

Heat oven to 180degC.

Line muffin tin with liners. Melt butter and allow to cool. Add eggs and vanilla and beat. Put aside.

Sift flour, sugar, baking powder and salt.

Pour butter and egg mixture into the middle of the flour mixture.

Mix with milk - be gentle, muffins do not like to be overmixed.

Layer some mixture in the bottom of each muffin liner, then pop in half a plum and about 3 chocolate buttons, layer more mix and pop another half plum and chocolate buttons on top.

Repeat until muffin tin is full.

Bake for 20-25 minutes at 180degC.
