Taste Cafe Oamaru’s lemon crunch

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Serves about 12-16

For the base:

1½ cups of flour

¾ cup of white sugar

150gm of butter

For the topping:

Place in a mixer:

1 ¾ cups of sugar

4 eggs

Zest of 3 lemons

½ cup of lemon juice

⅓ cup of flour

Method

Preheat oven to 180degC.

In a food processor add flour, sugar and butter. Whizz until it resembles fine breadcrumbs, and press into a lined baking tray.

Cook in the oven for 15 minutes until golden. Remove, and reduce oven temperature to 150degC.

To make topping, add eggs to sugar slowly, one at a time, and beat until thick and pale in colour, add zest. Then slowly add the lemon juice.

Add flour, mix gently and pour over base, and cook for 40 minutes.
