Strictly Coffee's Feijoa and blood orange muffins
makes 12
4 cups flour
4 tsp baking powder
1 cup raw sugar
4 eggs
1 cup milk
1 cup yoghurt
300g butter, melted
3 Tbsp vanilla essence
4-6 large feijoas
4-6 blood oranges, peeled
raw sugar to sprinkle
icing sugar
Sift together flour and baking powder.
Add raw sugar.
In a separate bowl, mix together eggs, milk, yoghurt, melted butter and vanilla essence.
Add to dry ingredients.
Chop feijoas and blood oranges into chunks, add to the mixture and stir in loosely, being careful not to over-mix.
Grease two muffin trays.
Spoon mixture into tins evenly.
Top with a few slices of blood orange and sprinkle with raw sugar.
Cook at 200degC on fan bake for 20 minutes.
Leave to cool then dust with icing sugar.
Serve with butter or yoghurt on the side.
You can use green apples, chocolate, rhubarb or plums in this recipe.
