Miso turnips

Whenever I cook turnips I tend to get a mixed result of lovers and haters. They are actually very versatile as you can grate them into a salad or fritters. They are great pickled, roasted, mashed and as I have done here braised with the tops.

Serves 4-6

1 kg turnips with tops, remove the tops and set aside, cut turnips into 6 wedges

2 Tbsp olive oil

1 Tbsp miso paste

1 lemon, juice

Salt and cracked black pepper

Method

Heat a heavy based pot up with the oil over high heat.

Add the turnips and cook until browning on all sides (8 minutes).

Add the miso paste and coat the turnips.

Squeeze over the lemon juice and add ½cup water, season with salt and pepper. Cover with a lid, turn down the heat and cook until tender (10 minutes).

Add the tops and continue cooking for a further 5 minutes.

Remove the lid and continue cooking for a further 2-3 minutes

Serve the turnips, tops and any liquid and a wedge or two of lemon.
