Lime, coriander and yam salad

I have a surplus of fresh homegrown limes and have been blessed with a healthy crop of fresh coriander. The combination of these two ingredients work so well together. Adding a fresh, zesty dressing to this salad which has a wonderfully fresh addition of tender yams.

Ingredients

500g yams

2 limes, zest and juice

1 tsp sugar

½ tsp salt

1 small red onion, sliced into thin rounds

50g fresh coriander, roughly chopped

1 red chilli, deseeded and finely sliced

2 Tbsp olive oil

Cracked black pepper

Method

Bring a large saucepan of lightly salted water to the boil.

Top and tail the yams, cut the yams in half if large.

Add the yams to the water and cook until just tender (10-12 minutes).

Prepare the salad while the yams are cooking.

Add the zest, 2 Tbsp of lime juice, sugar and salt to a serving bowl.

Add the onion rounds and let them infuse into the lime juice.

Drain the yams and add to the lime dressing. Toss gently to combine.

Finish with the fresh coriander, chilli, oil and cracked pepper.

Combine gently, taste and adjust the lemon and salt if needed.

Best served at room temperature.
