Lemon crumble slice

This slice is so easy to whip up, as the crumble base works as the topping. The fresh lemons combined with condensed milk make the most divine, silky filling.

This simple recipe is a great one to have tucked away for those unexpected guests.

Ingredients

100g butter, softened

130g brown sugar

1 tsp vanilla extract

⅛ tsp salt

125g flour

1 tsp baking powder

85g oats

Filling

395g tin of condensed milk

2-3 lemons, zest and 90ml juice

Method

Preheat oven to 180°C.

Line a 20cm square tin with greaseproof paper.

To make the base/topping. Cream the softened butter, brown sugar, vanilla and salt until light and creamy.

Add the flour, baking powder and oats. Mix until combined.

Remove about ⅔ of the mix and lightly press it into the base of the tin. Even it out and bake for 10 minutes.

While the base is cooking, make the filling.

Mix the condensed milk with the lemon juice and zest. Stir well to combine. It will thicken as you do this.

Spread the filling over the base.

Sprinkle over the remaining topping.

Return to the oven and continue baking for a further 20 minutes.

Cool before cutting and eating.

Will keep in the refrigerator for up to a week.
