On the menu: Potato choice

Sometimes I wish chefs would be more selective with their choice of potato.

They may carefully source fresh salad, local fish and organic meat, but they still serve flavourless, watery nadine potatoes when there are so many more flavoursome varieties.

What about the wonderfully flavoured agria, the all-purpose desiree, or heather or red rascal or even the strangely coloured purple urenika (shown right)? And there are many more to choose from.
