Good Earth’s creamy curried parsnip soup
Serves 6

Ingredients
1 Tbsp butter
4 large parsnips, peeled and chopped
1 large onion, peeled and diced
2 cloves garlic, crushed
750ml vegetable stock
400ml cream
2 tsp of mild curry powder
2 tsp of garam marsala
To taste
salt and pepper
Method
Heat butter in pot and add garlic and onion and pinch of salt.
Cook for five minutes until onion is soft.
Add curry powder, garam masala, stir in parsnips.Add stock and cream.
Boil then reduce to simmer for about 20 minutes or until parsnips are soft.
Blend and season to taste.
Garnish with shreaded coconut.
