Kiki's gingerbread

Makes 1 loaf
Ingredients
125g butter
1 cup golden syrup
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp mixed spice
¼ tsp ground nutmeg
1 tsp baking powder
1 cup white sugar
2 cups standard flour
1 tsp baking soda
1 cup warm milk
2 eggs, lightly beaten
butter to serve
Method
Preheat oven to 165degC.
Line and grease a loaf tin 25cm long x 13cm wide.
Gently melt butter and golden syrup together in a saucepan.
Combine all dry ingredients in a large bowl.
Add baking soda to warm milk in a separate bowl.
To the bowl of dry ingredients add beaten eggs, melted golden syrup and butter and the milk mixture.
Use an electric beater to beat mixture well until there are no lumps.
Pour into loaf tin and bake for 1 hour. Test to see if cooked by inserting a skewer into the middle. It should come out clean. If not, continue to bake for 5 minutes at a time.
Serve warm with lashings of butter.
You can turn this into a decadent dessert served with poached pears and vanilla bean ice-cream.
