Brydone Organics' raw coconut rough

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Ingredients

Base
2 cups almonds, soaked in water overnight
2 cups dates, soaked in water overnight
½ cup raw cacao powder
3 cups dessicated coconut
1½ cups coconut oil, melted
salt

Topping
1½ cups cashews, ground
⅔ cups raw cacao powder
2 cups dates, soaked in water overnight
½ cups coconut oil, melted
long-thread coconut

Method
For the base, grind almonds in food processor then add dates, cacao powder, dessicated coconut, coconut oil and a pinch of salt and process.

Press into a sandwich tin.

For the topping, mix together ground cashews, cacao powder, dates and oil.

Spread over base and sprinkle over long-thread coconut.
