RECIPE: Smoked fish pie

This week: Orange Cafe's smoked fish pie

Serves 4-6
250g butter
1 medium onion, diced
2 heaped Tbsp plain flour
1 cup milk
salt and pepper to taste
310g tin smoked tuna (they use Sealord) - save the juice
½ cup cream
mashed potato
small handful grated cheese


Melt butter in a pan and cook the onion in it until soft Stir in flour and allow to cook for a couple of minutes.

Add the milk slowly, stirring all the time so it doesn't go lumpy, and allow the white sauce to thicken and cook. Once it is thick, add cream and juice from the fish. Season to taste with salt and pepper.

Flake the fish into the sauce. Put in an ovenproof dish. Top with mashed potato and cheese. Cook until golden brown.

Serve with salad and thick, crusty bread.
