Still we drop in for the whisky

The New Zealand Whisky Co distillery installation began at Speight’s Brewery in Dunedin yesterday, after about two years in the making.

Brewery manager Arron Goodwin said NZ Whisky Co got in contact in 2017 looking for wash, a high strength beer, that it would distil to make whisky.

Mr Goodwin said the whisky and Speight’s brewery heritage went back more than 150 years.

"James Speight apprenticed at the Wellpark Brewery, which became the Willowbank Distillery."

NZ Whisky Co director Warren Egen said that history could be good for Dunedin’s tourism industry and made the collaboration important.

Support beams were cut through and roof panels removed for the parts to be lowered into place.

The crane-lift was delayed from March and NZ whisky founder Greg Ramsay said their "Oamaru team are gutted not to be able to participate on site but were all raising a dram or two to celebrate".

The Speight’s team hoped to start distilling by July.
