Sesame, soy, chilled cucumber salad

Simple salads such as this one are great as you can prepare and eat them within 15 minutes. Cucumbers soak up the soy sauce and sesame seeds to create this salad  packed with flavour.

Serves 4-6 as a side dish

1 (200g) cucumber (approx)

1 Tbsp good-quality salt

2 cloves garlic, crushed

2 Tbsp light soy sauce

2 Tbsp sesame seeds, toasted

1 Tbsp roasted chilli sauce (or your favourite)

Method

Prepare the cucumber by slicing in half lengthways, removing the seeds and cutting the cucumber on an angle into 0.5cm slices.

Place the cucumber into a bowl and sprinkle with salt and garlic. Let sit for 5 minutes.

Rinse the cucumber and pat dry, removing excess moisture.

Mix together the soy sauce and sesame seeds, add the cucumber and toss together.

Drizzle over the chilli sauce and enjoy. It is that simple!
