Torte recipe famous around the world

This recipe is adapted from Marian Burros. This torte recipe is famous the world over. Plums are in season and they always make the most delicious cakes/tortes.

Plum torte

Serves 8

Ingrdients

1 cup sugar
180g unsalted butter, softened
1 ½ cups flour, sifted
2 tsp baking powder
pinch salt
3 eggs
12 plums (black doris or something similar), cut in half and stones removed
sugar, lemon juice and cinnamon for topping

Method

Preheat oven 180degC.

Grease a 18-20cm springform tin.

Cream the sugar and butter in a bowl. Add the sifted flour and baking powder, salt and add the eggs. Beat well to combine.

Spoon the batter into the prepared tin. Place the plum halves skin side up on top of the batter.

Sprinkle lightly with sugar, squeeze of lemon juice and a light dusting of cinnamon.

Bake for 40min to 1 hour. Remove and cool. This torte is extra delicious served warm with whipped cream.

This torte can be frozen.
