Fennel and plum salad

Sadly, the plums season is coming to a close, but before it ends Alison Lambert fits one more recipe in.

I found the combination of sweet/sour plums with crispy, aromatic fennel partner beautifully together. 

This quick and easy salad works as a refreshing lunch and is perfect alongside grilled fish or pork.

Serves 4

Ingredients
1 orange, juice
1 Tbsp lemon juice or white wine vinegar
1 tsp honey (optional)
1 tsp freshly grated ginger
pinch salt
1 Tbsp extra virgin olive oil
1 bulb fennel, sliced thinly and tops reserved
4 plums, cut into thin wedges
2 Tbsp fennel fronds, roughly chopped

Method
Mix together the orange juice, lemon or vinegar, honey, ginger, salt and oil.

Add the fennel and toss to combine and let marinate for 20 minutes or so.

Add the plums and fennel tops, toss gently to combine and serve at room temperature.
