RECIPE: Spinach and feta pie

Michelle Howie, of Croque-o-dile in Princes St, Dunedin, will add warmth to your winter with this tasty spinach and feta pie.

flaky pastry
1 red onion, sliced
1 cup cooked spinach, chopped (defrost first if frozen)
¼ cup sun-dried tomatoes,
½ sliced cup mushrooms, sliced
¼ cup grated cheese
250g feta cheese, crumbled
sweet chilli sauce
salt and pepper

Line pie dishes with flaky pastry. Mix the other ingredients with sweet chilli sauce to bind.

Put in the lined pie dishes and bake at 180degC for about 25 minutes.
