The Good Oil Cafe's cinnamon swirls

 

1 litre lukewarm water
1 Tbsp dry yeast
1 tsp oil
1/2 tsp salt
8 cups flour

filling:
250g melted butter
2 cups brown sugar
4 tsp cinnamon

Mix water, yeast, oil, salt and allow to stand for 15 minutes for yeast to activate. Mix in the flour. Cover and allow to double in size (approx 1 hour).

Roll mixture out on a floured bench. Mix filling ingredients and spread over the dough. Roll up and cut into approx 12 slices.

Bake in muffin trays for 20 minutes at 190degC.
