Creating an edible gingerbread cuckoo clock is not everyone's idea of an after-work hobby, but for Dunedin baker Tammy Corbett, who works at Marbecks Foodstore, it was the perfect challenge.

The giant biscuit structure weighed about 10kg and was held together by 5kg of icing, Ms Corbett said.

It took about three weeks to make.

However, the biggest challenge had not been baking it but mounting it on wooden crates so it could be displayed.

Ms Corbett said the clock would not be eaten and was only for use as a display piece at Marbecks.
