In a series, Shawn McAvinue asks people making the food served at ram sales in the South to share their recipes. This week, Kathryn Salter, of Chatton, shares her scone recipe, which she helped members of Rural Women Waikaka Valley serve at the 14th annual Merrydowns on-farm ram sale in Waikoikoi.

3 cups of plain flour

6 tsp baking powder

1 tsp salt

120g of butter melted

1½ cups of standard milk

¾ cup of fresh cream

Method

1. Sift the dry ingredients into a bowl.

2. Add the butter, milk and cream to the bowl.

3. Mix contents of bowl to a dough.

4. Put dough on an oven tray and mould dough into a square slab.

5. Bake slab in an oven pre-heated to 150degC on fan bake for 10-15 minutes.

6. Remove the slab from oven when its top turns a light brown.

7. Cut slab into squares.

8. Cut squares in half and spread butter, jam and fresh whipped cream on them.
