He is producing spiced honey Mother's Day biscuits to a traditional recipe and uses wooden moulds at his newly opened Vinbrux Biscuits shop, in Arun St, Oamaru.
In Germany and France, it is a traditional way of celebrating Mother's Day, going back centuries. Mr Vinbrux also produced bunny biscuits for Easter.
He plans to bake biscuits for other special days, including Christmas.
The shop opened in March, revitalising the old Arun St shopping area that now includes the Arun St Dairy and takeaways specialising in Pacific Island food, the Limousin beef butcher's shop, and caterer Leo's on Arun.
Mr Vinbrux owned and operated the Harbour St Bakery until seven years ago, when he sold it.
He is a fourth generation baker in his family, which has operated a biscuit bakery in Germany for more than 30 years.
His venture was partly inspired by spotting a moulding machine on an internet trading site.
The new biscuit shop is open from Monday to Friday. Two to three times a week at the shop, depending on demand, he bakes biscuits, shortbreads and cookies using traditional European recipes.
