Lawrence chomps into chocolate

A new chocolate store in Lawrence has been completely overwhelmed with the support of the local community.

The Lawrence Mint opened for business on Monday, December 12, selling chocolate truffles, mudcakes, tarts, pastries and chocolate ''bark''.

Co-owner Alisa Dacy said she and her business partners were unprepared for the level of interest in the new store.

She believed they had made enough truffles and chocolate to last five days but they were all sold within a day.

''That's 500 truffles in one day ... that's a lot of chocolate.''

Demand was so high the store had to close on Wednesday to stock up on supplies and make more truffles.

Mrs Dacy, originally from Australia, spent years travelling and working in the food industry.

She learned to make chocolate on her overseas experience when she worked in ''the smallest chocolate shop in Belgium''.

After years of working in Scotland and Australia, Mrs Dacy and her husband, Pete, took the gamble and moved to Lawrence where they met business partners Mel and Colin Foster.

Mrs Foster said the support from the community was ''incredible''.

The positive reaction and popularity of the chocolate products was ''absolutely amazing''.

Lawrence Mint will close for a few days over the Christmas period but will be back in business in the new year.

Mrs Dacy said the outfit was small at this stage but she hoped to expand in the future.

The plan was to eventually cater for ''long tables'' and provide picnic baskets with food sourced from local businesses.

She said she wanted the business to be classy but affordable.
