Those hoping to line up for a late night burger at Alexandra's Pie Cart were out of luck after the town's iconic mobile fast food outlet was gutted by flames.
Witnesses reported seeing a "massive" ball of smoke and "really high" flames coming from the cart which was parked on Centennial Ave, near the town's museum and information centre.
Station officer Gary said the occupant was taken to Dunstan Hospital for a check up but was believed to be uninjured.
He said the cause of the fire should be known within a few days.
Roxburgh fire
Roxburgh and Millers Flat Volunteer Fire Brigades were called to the scene about 3.30pm to find the fire well involved.
Roxburgh brigade deputy chief fire officer David Welsh said the single occupant was uninjured.
