This week: Classic Cafe's apricot slice
250g butter
1 cup brown sugar
1 can condensed milk
2 cups dried apricots, chopped
2 packet wine biscuits, crushed
¼ cup coconut
½ cup white chocolate melts
Melt butter, sugar and condensed milk in microwave for two minutes. Add apricots and crushed biscuits. Press into a lined tin (20cm x 30cm).
Sprinkle with coconut and melted white chocolate. Place in fridge to set.
