RECIPE: Savoury muffins

Raewyn Newton reveals the secret behind the Vanilla Rocket Cafe's popular savoury muffins. Vanilla Rocket Cafe's savoury muffins

makes 8

400g self-raising flour
200g grated cheese
onion, chopped
1 rashers bacon, chopped
1 Tbsp seed mustard
1 spring onion
250ml milk
1 egg
1 tomato, sliced

Combine flour, cheese, onion, bacon tomato and mustard in a bowl.

Whisk egg and milk and stir in to mix.

Spoon mixture into greased muffin tins and bake for 10 minutes at 160degC.

Take out and place a slice of tomato on top of each, then bake for a further 15 minutes.
