I love these wholesome slices filled with seasonal fruit.

You can substitute the fruit to suit what you have on hand.

Makes 9-12 squares

Filling

3 apples, peeled, cored and small dice

3 plums, cut into same size as apple

1 Tbsp sugar

½ tsp cinnamon

1 tsp cornflour

¾ cup wholemeal flour

¾ cup rolled oats

¼ cup coconut

½ cup brown or coconut sugar

pinch salt

¼ tsp ginger

90g butter, melted

Method

Heat the oven to 190degC.

Grease a 18cm by 18cm baking tin and line with baking paper.

Begin by preparing the filling. Add the prepared fruit to a bowl, and add the sugar, cinnamon and cornflour and mix together; set aside.

Now make the base and topping. Mix together the flour, oats, coconut, brown sugar, salt and ginger.

Mix through the melted butter until combined.

Press two-thirds ⅔of the mixture firmly on the bottom of the pan.

Add the fruit mixture and spread evenly over the base.

Crumble over the remaining mixture to cover and bake for 30 minutes or until golden and crisp.

Cool before cutting. Store in the fridge for up to 4 days.
