Sprouting broccoli is like a superfood. It is blooming with leaves, flowers and stalks, all of which are edible. It is great to grow, as you can pick off what you need and it will continue to reproduce.

 


Sprouting broccoli with toasted garlic and chilli 

Serves 4 

Ingredients 
500-600g sprouting broccoli (if large, cut in half)
4 cloves garlic, sliced thinly
pinch chilli flakes
extra virgin olive oil
sea salt and cracked pepper
lemon

Method
Bring a large pot of lightly salted water to the boil.

When it boils, plunge in the sprouting broccoli and cook for 2 minutes.Drain.

Heat 2 tablespoons of oil in large frypan, add garlic and cook until lightly toasted and giving off a wonderful nutty aroma.

Add chilli flakes and broccoli, season with salt and pepper, toss to combine and to fry ever so lightly.

Serve at once, with fresh lemon juice squeezed over.
