Welsh rarebit

This recipe is a classic and one that works perfectly with the cooler weather. Sometimes you just want  something cheesy and comforting — this ticks all the boxes.

This recipe is a classic and one that works perfectly with the cooler weather. Sometimes you just want something cheesy and comforting — this ticks all the boxes.

Serves 4

Ingredients
25g butter
20g flour
75ml stout
200g tasty cheddar
1½ tsp English mustard powder
2 tsp Worcestershire sauce
4 thick slices good quality bread (sourdough)
pinch salt and cracked black pepper

Method
Turn your oven grill to high.

Melt the butter in a small pot over a medium heat. Add the flour and stir together well. Cook for a minute or two.

Slowly whisk in the stout until there are no lumps and you have a glossy sauce.

Add the cheese, stirring until it is well combined and melted into the sauce.

Add the mustard and Worcestershire sauce and season to taste.

Toast the bread under the grill and then spread a thick layer of the cheesy mixture, making sure you coat all of the toast.

Place under the grill until the cheese bubbles and turns a delicious golden colour.

Remove from the oven and serve immediately.
