This week: Tarras Country Cafe fruit and nut slice.
Base:
1½ packs of wine biscuits finely crushed
200gm of melted butter
Mix crushed biscuits with melted butter, press into bottom of baking tray.
Topping:
Place into a large bowl the following:
300gm chocolate chips
1 cup chopped almonds
2 cups chopped walnuts
1 cup white chocolate chips
3 cups of coconut
1 cup dried chopped apricots
1 cup raisins
2 cans sweetened condensed milk
Line 23 x 32cm baking tray with baking paperMix crushed wine biscuits with melted butter and press into the bottom of the tray.
To make the filling, mix chocolate chips, nuts and fruit with one of the tins of sweetened condensed milk. When well-mixed, pour over the biscuit base and press gently.
Drizzle the second can of condensed milk over top of mixture.
Bake in moderate oven (180degC) for 30 to 35 minutes or until golden on top.
Cool completely before cutting.
