Quick apricot tart

It is always good to have a dessert that you know you can make in a few minutes anytime of the year. Today, I’m using apricots, but almost any fruit will work for this.

Quick apricot tart

Ingredients

750g puff pastry
8 ripe apricots, halved and stones removed
4 Tbsp cream cheese
2 Tbsp apricot jam
2 Tbsp sugar

Method

Preheat the oven to 190degC.

Roll out the pastry so you can cut four 10-12cm rounds (I used a side plate).

Place the pastry rounds on baking paper and place in the fridge for 30 minutes.

Mix the cream cheese with the jam.Place the rounds on a baking tray. Prick the centre of the pastry, leaving a 2cm rim around the edge.

Spread over the jam and cream cheese mixture on the pastry, leaving the 2cm rim.Place 3-4 apricot halves cut side down. Sprinkle over the sugar and bake the tarts for 20 minutes or until well risen and golden.

Serve warm with vanilla ice cream or cream.
