Elderflower vinegar

Elderflowers are blooming everywhere at the moment and this method of infusing the blooms in vinegar is an excellent way to add their sweet fragrance.

It gives the vinegar a soft note which can be used in dressings.

It goes particularly well with melon, gooseberries and fish.

Makes 480ml

Prep time 15 min

Resting time 3 weeks

Ingredients

10 elderflower heads

2 Tbsp honey

420 ml cider vinegar

Method

Remove the freshly picked elderflowers from the stalks and small stems.

Pack loosely into a sterilised jar.

Mix the honey with the vinegar and pour over the flowers.

Cover with a lid and shake gently to mix.

Let stand in a dark place for 3 weeks.

Strain the vinegar, discarding the flowers.

Pour the vinegar into a clean bottle or jar.

Use as desired.
