Cooking 101: Glühwein (mulled wine)

Daniel Pfyl, hospitality management lecturer at Otago Polytechnic, shares some professional techniques to make your cooking easier.

Glühwein or mulled wine is a wonderfully warming winter drink, spiced and served hot.

Serves 6

1 bottle red wine
65ml water
65g sugar
1 cinnamon stick
1-2 cloves
1 star anise1 bay leaf
a couple of pieces of lemon peel
a couple of pieces of orange peel
a pinch of ground nutmeg
20ml brandy

1 Put all the ingredients except the brandy into a clean pan and bring to the simmer, but do not boil as the alcohol will evaporate. When hot, add the brandy and serve.

2 You can easily double or treble the recipe. It will keep sealed in a bottle and heated just before serving.
