Yesterday, he fronted up to about 140 people, including many who were members of, or representing, environmental groups opposing the development, on the site of one of the dairy farms on Ohau Downs Station.
Mr Peacocke was on a field trip yesterday afternoon through the Mackenzie, Ohau and Omarama Basins as a prelude to the Mackenzie Country Symposium in Twizel today. He will also take part in the symposium today.
While the three companies proposing the dairy farms - Southdown Holdings, Williamson Holdings and Five Rivers - have backed away from the proposal, it remains part of their long-term plans.
They are focusing on the process of getting resource consents for water, but still see cubicle dairy farming in the area as a future option if it becomes more accepted in New Zealand.
Mr Peacocke presented his case on the roadside leading into Lake Ohau and cutting through the site of one of the proposed developments on Ohau Downs.
He faced some questions about the developments, but was received politely.
Groups on the field trip, including the Environmental Defence Society, Forest and Bird, Mackenzie Guardians and Ohau Protection Society, have vehemently opposed the developments, along with the greening of the high-country landscape by more irrigation.
The dairy farms would have cows housed in cubicles for 12 hours a day during summer and 24 hours a day in winter, leading to some groups calling that "factory farming".
Mr Peacocke defended the cubicle as being better than traditional dairy farming, as well as more environmentally sustainable, particularly in the disposal of effluent and suitability for the sensitive landscape in the high country.
"In our view, the traditional dairy model is fraught," he said.
The field trip travelled as far east as Ohau Downs and west to Tekapo, before returning to Twizel.
Earlier this week, Federated Farmers' leaders said they would boycott the symposium, but some farming families had a low-key presence among the 180 registrations for today's symposium, and on yesterday's field trip.
