If you haven't got a good book about growing and using herbs Herbs: River Cafe Handbook No 10 by Nikki Duffy (Bloomsbury) is a useful reference with lots of information and recipes.

While it's best to grow your own, it's not always possible and she lists those such as garlic, bay, rosemary, which lose little of their quality if shopped for carefully. There are recipes using common and less common herbs such as rhubarb crumble with angelica, beef stew with lovage, tarragon stuffed eggs, and loin of lamb with lavender and lemon thyme.
