For John and Susan Elliot of Lammermoor Station, a dream will come true tomorrow when they raise their whisky glasses to toast the opening of their whisky distillery.

"It started as a hobby but now the interest is making it more than a hobby," Mrs Elliot said.

"It's something we always wanted to do."

The opening would feature pipers, speeches and even some haggis to pay tribute to the Scottish heritage, Mrs Elliot said.

The Elliots started making whisky in September last year. Since then, more than 100 people had visited the distillery, but the couple wanted to have an official opening.

Mrs Elliot said it was too early to taste their Lammermoor whisky, but there would be plenty of other beverages available.

The Paerau district is 55km south of Ranfurly.

Tasmanian Bill Lark, sometimes called the Godfather of whisky in the southern hemisphere, was scheduled to speak at the opening but had cancelled. .

Members of the public are invited to attend tomorrow's opening.

Proceeds will go to the Maniototo Hospital rebuild.
