Summer fruit popsicles

Popsicles conjure up many a memory of hot summer days. Making them with the children is a great idea as not only is it fun, but you can load these popsicles up with fruit which ensures they are getting some valuable nutrients.

Summer fruit popsicles

Makes 8

Ingredients
1 litre coconut water or coconut milk
2 cups summer fruit: berries, juicy peaches, apricots etc

Method
Lightly mash some of the berries with the back of a fork to add a little texture to the popsicles.

Dice or slice the peaches etc and then fill each popsicle mould with a good selection of the fruit. Make sure you have plenty of fruit in each mould.

Pour over the coconut water to cover the fruit, insert the stick and freeze overnight.

Dip popsicles briefly in hot water to unmould.
