Apples with oats and cream

This delightful dessert has layers of tangy stewed apples and caramelised oats nestled in whipped cream. It’s simple, yet satisfying.

 

Serves 8

500g apples, peeled, cored and diced

2 Tbsp brown sugar

50g butter

100g wholemeal oats

100g sugar

½ tsp cinnamon, ground

200ml cream

1 tsp vanilla extract

30g dark chocolate

Method

Put the diced apples in a suitably-sized pot along with the brown sugar and two tablespoons of water. Cover and cook for 10-15 minutes over a moderate heat until the apples are soft and the liquid has been absorbed. Leave to cool.

Melt the butter and sugar in a medium-sized fry pan until the sugar starts to go golden. Add the oats and toss together in the sugar. Continue cooking until the oats become golden and crunchy. Set aside to cool.

Add the cinnamon and vanilla to the cream and whip to soft peaks.

To assemble

Place a layer of cream on the bottom of your serving bowl (or you can do this in individual glasses if desired).

Spread over half of the cooked apple, sprinkle with half of the caramelised oats (leaving 2 Tbsp for garnishing the top).

Repeat finishing with a layer of cream. Garnish the top with the last of the oats and grate over the dark chocolate.

Refrigerate for at least an hour to firm up (it does seem to get better if left overnight).
