Apple and feijoa sponge pudding

I have been truly blessed this season with the bountiful supply of apples and feijoas. 

My children were hankering for a warming dessert the other evening. The combination of these two fruits baked under a warming sponge, turned out to be an absolute favourite in our household.

Ingredients

600g apples, peeled and cut into 3cm pieces (approx)

500g feijoas, peeled and cut in half

1 lime, zest and 1 tsp juice

75g raw cane sugar

20g butter

Sponge

125g butter, softened

½ cup sugar

1 tsp vanilla extract

2 eggs

2 cups flour

2 tsp baking powder

½ cup milk

Cream for serving

Method

Preheat the oven 175degC.

Grease a 25cm×18 cm (approx) oven dish with a little butter.

Place the prepared apples and feijoas into a suitable sized saucepan, add the raw sugar and lime juice and 2 Tbsp water, cover and cook over a moderate heat for 10 minutes so that the fruit has become soft.

Place the cooked fruit into your prepared dish and set aside.

Cream the butter and sugar together, add the lime zest, vanilla and beat until light and creamy.

Add the eggs one at a time and beat well.

Sift the dry ingredients together and add half to the mixture and gently mix through.

Add the milk and then repeat until lightly combined.

Spoon the batter over the cooked fruit, and bake for 35-40 minutes or until a skewer comes out clean from the centre.

Serve warm with cream.
