During the cruise along the French Riviera to St Tropez and Ibiza, ending in Barcelona, 44 ''mixologists'' from all over the world competed for the 2013 crown.
Mr Clark (32), now resident in Wellington working for Hummingbird and Betty's bars, was the first New Zealander in the competition and was selected in May after months of competition in the Diageo World Class New Zealand battle.
He made it to the finals after impressing during the ''Ibiza Tapas Challenge'', in which the top 16 picked two tapas each and matched an original cocktail to each dish.
Mr Clark, who tied in the challenge with Luke Ashton (Australia) paired a Talisker 10-year-old Single Malt Scotch whisky-based cocktail with an oyster tapa, and one based on Ciroc Vodka with a baked goat's cheese and pickled aubergine on pastry, securing him a place in the top eight.
''Winning a challenge at what is such a prestigious international drinks industry competition is an absolute dream come true,'' he said.
''I am humbled to be one of just a few recognised for their efforts - especially amid such exceptional talent and in front of industry `heroes' that include Dale DeGroff and Salvatore Calabrese.''
After making the finals, Mr Clark, who will soon open Midnight Bell in Auckland's Ponsonby Central establishment, was beaten by Spain's David Rios, the results announced on Wednesday at Barcelona's bull ring, La Monumental.
