Ask a chef: Craterscapes' gluten-free mud tarts

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

 

Craterscapes' gluten-free mud tarts 

Ingredients

100g butter
275g energy chocolate
½ cup cream
½ cup brown sugar
3 eggs, lightly beaten
1 cup ground hazelnuts

 

Method

Melt butter, chocolate, cream and brown sugar in a medium-sized pot. Take off heat and cool for a few minutes. Add eggs and hazelnuts to chocolate mixture. Pour mixture into muffin tins (makes 6 giant or 12 small tarts). Bake at 160degC for about 20 minutes or until the tops just start to crack.

Store in refrigerator.
