Foodies got primal in Dunedin on Wednesday night, ripping flesh from the bone at the Fire and Darkness outdoor street food market.

The market was the opening night event of the International Food Design Conference and Studio, which ends today.

Otago Polytechnic Food Design Institute students created street food meals to cater for the 200 people at the event, mostly conference delegates and speakers.

Conference delegate, chef lecturer Bryon Dorrian, of Waiariki Bay of Plenty Polytechnic, said his favourite street food at the market was the deep fried chicken pieces and beef ribs, glazed with a ‘‘primal'' sauce.

His colleague, chef lecturer Reg Hawthorne asked the students what made the sauce primal and was told ‘‘it comes from the caves.''

Professor Richard Mitchell, of the Otago Polytechnic Food Design Institute, said the night was a chance for people to ‘‘let their hair down'', network and ‘‘digest'' the first day of the conference.
